It simply is the URL of the site that sent you the traffic. We can use this bit of information to target certain traffic sources and redirect their traffic appropriately. When traffic is coming from Google, the keywords a user searched to find your site can be detected in this referrering URL. We can use this bit of information to treat certain keyword searches specially, and redirect the traffic appropriately.

Cookie stuffing is the loading of a cookie, typically orginating from an external site, into the users browser when the user did not actually visit that site.
Why is cookie stuffing used? A couple of ways: there is the Whitehat method of cookie stuffing, the Greyhat, and the Blackhat.
The white hat consists of agreeing with an affiliate provider that you will use cookie stuffing along-side of a product review or ad placement to ensure that the visitor is associated with your promotional efforts regardless of whether or not the user clicks the advertisement link to the external site that will set the cookie. This will allow for the promotion to take affect no matter what, and if the visitor buys a product in the future through a different link or Google search then you will still gain a commission for the sale.

The Grey Hat method is the application of the exact same concept, except the advertiser does not ask for permission before hand because the practice of cookie stuffing is against the affiliate program’s terms of service.
The Black Hat method is stuffing a cookie for a service such as Amazon without providing any promotional material at all in hopes of the chance that that visitor might purchase products from Amazon the same day (Amazon cookies only last 24 hours). This is the darkest application of this feature, and don’t kid yourself… it’s stealing. This method is can even be applied on sites that the stuffer does not own, including public forums, blog comments, and hot-linked images.
